A Working Mom's Meal Plan

The hardest part of my day is when we get home and everyone is immediately hungry. I love to cook and prefer
home-cooked meals, but I don't like to cook much during the work week. And yet, dinner has to get on the table...
My solution: make-ahead meals, freeze-ahead meals and recipes so easy that I'll make them on a Monday. I cook
mostly on the weekends, always doubling recipes, and rely heavily on my extra freezer and a decently-stocked pantry.
This cooking style saves me time and money, and it makes my life simpler—so I can actually enjoy sitting down
to supper at 6 with my family. I hope these recipes will make the witching hour a little better at your house too.

Pantry Meals

I like to keep the pantry stocked so I don't have to run to the store on a weeknight. When you keep a good supply of ingredients in the house, it's easy to pull together meals on the fly. (Many of these use prepared foods, so if you're a purist, stop reading now.)

*Frozen ravioli, frozen spinach, marinara sauce and shredded mozzarella: layer in a casserole dish and bake until bubbly for a quick lasagna of sorts

*Frozen pierogies: saute in a mixture of olive oil/butter, and serve with lots of broccoli and parmesan cheese

*Frozen dumplings: pan fry and serve with soy sauce, or simmer in chicken broth for soup; add scallions if you have them

*English muffin pizzas: top english muffins with sauce, cheese and toppings and bake for about 10 minutes or until bubbly

*Frozen tortellini: toss with butter, peas and parmesan; Bove's vodka sauce; frozen homemade pesto; make a quick white sauce with leftover cream; or simmer in broth

*Crescent dough: wrap around hot dogs, use as a pizza base, or make "pockets" to use up leftovers

*Indian sauce in a jar: make with chicken, shrimp or beans; serve with basmati rice and naan

*Chicken sausage: use slices of it on pizza, or make sandwich subs with french bread and melted cheese

*French bread: great to have in the house for all kinds of sandwiches or to round out a soup meal

*Egg sandwiches: toast any kind of bread you have, add scrambled eggs, cheese, and bacon/sausage (or vegetarian sausage)

*Frozen blueberries: makes pancakes, waffles or french toast healthier; also nice to have on hand for muffins

*Frozen strawberries: zap in the blender with milk and vanilla ice cream for a not-too-sweet shake

*Tortillas: put beans and shredded cheese between two tortillas, then cook in a Pam-sprayed skillet over medium heat on both sides for quesadillas

*Zatarain's jambalaya mix: add frozen shrimp, kielbasa and/or rotisserie chicken, plus a can of diced tomatoes or diced tomatoes with green chiles

*Sliced sandwich bread (can freeze it): PB & Jelly, PB & Fluff, PB & Honey with or without banana; grilled cheese; or BLTs if you're lucky enough to have the right ingredients

*Frozen fish: thaw and then soak in milk, cover in panko breadcrumbs and saute in skillet, squeeze a lemon over it or make a browned butter sauce; add a box of rice pilaf on the side

*Rotisserie chicken: good in quesadillas, on pizzas (especially with bbq sauce), in soups, or make a quick batch of chicken salad

*Trader Joe's Orange Chicken: try it over angel hair pasta instead of rice, add broccoli on the side

*Trader Joe's jarred bruschetta: spread on good bread, top with fresh mozzarella and bake until bubbly, perfect with a salad

*Pizza dough: freeze the fresh kind from the store, can use all kinds of leftovers in either pizza or calzones

*Frozen shelled edamame: good snack for kids or grownups (with sea salt)

*Frozen veggie burgers: find a kind you like (we like Morningstar Farm's black bean burgers), serve with sweet potato fries and lots of ketchup

*Cheddar cheese: try making an oven grilled cheese with three pieces of buttered white bread, spread with a little Gulden's mustard and stacked with slices of cheddar in between, bake until golden

*Potatoes: make a frittata by dicing and sauteing them in oil in an ovenproof skillet until browned, add beaten eggs (and veggies if you have them), cook until top is almost dry, then cover with shredded cheese and pop in the oven until melted

*BBQ sauce: good for pizza, quesadillas, meatloaf topping or just for dipping

*Kids picnic meal #1: cheddar cheese, walnuts or other nuts, apple slices, triscuits, dried cranberries

*Kids picnic meal #2: cottage cheese or yogurt with cut up fruit, clementines, canned pineapple or applesauce

*Kids picnic meal #3: cherry tomatoes, diced carrots, cucumber, ranch dip, pita bread, hummus, edamame

*Broccoli: hollow out some baked potatoes and fill with steamed broccoli and cheese, then bake until bubbly; the leftover potato from inside is also good mashed with broccoli, cheese and a little butter

*Leftover night: everyone gets to pick what they want out of the fridge! Great when you have a little of this, a little of that...
